Gyuto 250mm Aogami superThis Gyuto (Japanese chef knife) feature a flat heel, slight belly, tall bevel with a good distal taper and nimble tip. Shop made san ma with 26C3 steel core and historic wrought iron with nickel strips cladding (trash knife). Forged to shape and to geometry the bevels are ground on water cooled grinding stone with an etched finish. The handle is made with Laburnum.
