Antipodes Chardonnay Barrel Aged Gin 200ml ChampagneOur Pink Gin rested for 5 months in a few 220L French Oak Barriques after 3 vintages of Chardonnay from Lark Hill Winery. The melding of the spirit with the barrel has imparted a golden hue. Buttery and vanilla oak notes are revealed from the earlier vintages of organic wines into the spirits citrus and floral tones. the base wine was fermented dry in stainless steel

This rum is one of our cleaner fermentations and lower on funky esters than our other releases allowing the focus to shift toward the cask
